How did we get started? The Pandemic caused a lot of people to change how they live, and we were no different. Not being able to go to our favorite restaurants had a major impact on our lifestyle. Due to the time it takes to make Pho the right way, one of our favorite places to eat was our local Pho restaurant. However, once the pandemic was in full effect, this was no longer an option. So what did we do then? The entire family got involved in brainstorming on how we can make AUTHENTIC Pho in a short amount of time to make it convenient for our busy lifestyle. First, we took our family recipe that has been passed down several generations, and started to experiment on ways to make it faster, and not sacrifice flavor, taste or authenticity. Second, we spent time and time again perfecting our process until finally, we hit perfection! What did we do next? We made kits for ourselves, family members, coworkers and friends to enjoy at home. What happened next? Friends would tell other friends, family would tell their friends, and before you knew it, there was a circle of demand for our new Pho Kit. Established in 1970. The original owner of Nino's Pizzeria opened up this location roughly 30 years ago. Two additional locations were opened, one of which still exists on 59th Ave and Peoria. The original owner sold the 59th ave and 99th ave locations as separate business. So, although they share the common name of "Nino's Pizza" the restaurants are no longer associated with one another on a business level. The 99th ave and Olive location has only switched hands two times. Once purchased from the original owner by a woman known as Gail who, after 19 yrs of ownership sold the business to it's current owner Chirssy. Chirssy has been owner/operator of Nino's for over 7 years (as of 2013). People come from all over the west valley to visit this famous restaurant. Our Food Is Fresh… Nothing Has Been Frozen Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go. The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good. [read more]

We’re very proud of the beautiful shop that we’ve built in Peoria, Arizona. We’re very proud of the great specialty coffee that we serve from Peixoto. We’re even proud of the matte black Not Neutral mugs that we serve our drinks in. But anyone could build something nice, serve something delicious, or buy some neat drinkware. We’re proud of a lot of things, but we’re most proud of the community that we get to experience each and every day in and around our shop. And we certainly didn’t build this community – it was here in the surrounding neighborhoods and schools long before we broke ground. Rather, we saw an opportunity to serve and host this thriving community and concluded that a great coffee shop would be a great way to do this.
