The idea of Booty's was hatched way back in 1985 by Andy LiButti while he was attending Florida International University. In 1952, a brand spanking new silver bullet diner was delivered to a small community in Upstate New York. This Mountainview Diner, built in Singac, New Jersey, Model No. 330, was slated to be “the most modern kitchen in all of upstate”. The residents of Herkimer watched in amazement as the diner was delivered on a flatbed truck and installed right along Main Street. For 65 years the Empire Diner has been the hub of the community and has held a special place in the hearts of many. It tells a story of a gathering of family and friends enjoying great food and lots of laughs. Otto’s Empire Diner has kept the tradition alive and well, winning numerous awards with their food. Among the most notable are the Best Cheeseburger and Best Bacon Cheeseburger awarded by the New York Beef Council and the most recent acclaim of Best Diner in Upstate New York as voted by hundreds of thousands of New York residents. Otto’s Empire Diner is home to the work’s largest Omelet as recognized by Ripley’s! Believe it or Not. This amazing omelet consisted of 41,040 eggs and an unbelievable 2,128.75 square feet. I took that passion and attended Johnson & Wales University; where I successfully graduated with a degree in Baking & Pastry Arts as well as a Bachelor's in Food Service Management. I worked at the Four Seasons Hotel Denver where I gained priceless knowledge about the hospitality industry and fine dining. After moving back to my home state, Arizona, I became the first pastry chef at an upscale casual restaurant in New River. From September of 1989 until June 1999, my wife and I owned and operated "Town Line Deli and Pizzeria" on Cape Cod Massachusetts. Back in January 1999, we vacationed in Arizona at my brother's house in Arrowhead. Anthony and Tina told us the area was starving for a "family" owned Pizzeria where families can enjoy the casual atmosphere and great back east style Italian food at a good price. On the airplane ride back to frigid, snowy, icy, Cape Cod, Judy and I decided to put our pizzeria up for sale and move ourselves and our son Robert to the Valley of the Sun. Our hopes are to establish a casual family atmosphere at an affordable price.
