Rito's Mexican Food is celebrating 45 years of business this year and we could not be more excited about the future as a company. What began as a neighborhood convenience store within the Garfield Historic Neighborhood quickly found itself selling more burritos and tacos from its limited "to go" only kitchen, than grocery goods. To that end, Rito and Rosemary Salinas decided to pivot Rito's concept into a take-out-only Mexican Food establishment that has served the "Valley Of The Sun" time-honored family recipes spanning generations. Rosemary and Rito have since passed the company on to their daughter Charlotte who embodies the same work ethic her parents instilled within her over the course of their careers. In 1958 the first Village Inn Pancake House opened its doors in Denver, Colorado and began offering what has since made us famous— made-from-scratch buttermilk pancakes, fresh eggs cooked any style, sizzling bacon and a pot of steaming hot coffee.
More than once, vacationers in Denver stopped at Village Inn for a bite to eat and enjoyed it so much that they inquired about franchise opportunities before leaving.
