We started out at our original location at 26th Ave. and Deer Valley Road in Phoenix, adding our second and largest restaurant at Union Hills and 7th St in Phoenix. Javier Ruiz immigrated to the United States in 1967 with the dream of opening a taco shop. He achieved his dream 16 years later with the help of his brother David Ruiz by opening “Cotijas Taco Shop” in El Cajon, California. Thanks to the success of this restaurant, more of the Ruiz family members were able to become more involved in the company. In 2003, the Ruiz brothers decided it’s time to expand the family business to Tennessee under the name “Oscar’s Taco Shop®.“ Today, Javier Ruiz has handed the keys to his kids and even though he is retired, he reminds them to always look forward and never look back. In 1958 the first Village Inn Pancake House opened its doors in Denver, Colorado and began offering what has since made us famous— made-from-scratch buttermilk pancakes, fresh eggs cooked any style, sizzling bacon and a pot of steaming hot coffee.
More than once, vacationers in Denver stopped at Village Inn for a bite to eat and enjoyed it so much that they inquired about franchise opportunities before leaving. Such requests inspired co-founders Merton “Andy” Anderson and Jim Mola to place an ad in The Wall Street Journal for prospective franchisees. Soon after, the first Village Inn franchise started operating in 1961, leading the way for successful franchise development.
