From September of 1989 until June 1999, my wife and I owned and operated "Town Line Deli and Pizzeria" on Cape Cod Massachusetts. Back in January 1999, we vacationed in Arizona at my brother's house in Arrowhead. Anthony and Tina told us the area was starving for a "family" owned Pizzeria where families can enjoy the casual atmosphere and great back east style Italian food at a good price. On the airplane ride back to frigid, snowy, icy, Cape Cod, Judy and I decided to put our pizzeria up for sale and move ourselves and our son Robert to the Valley of the Sun. Our hopes are to establish a casual family atmosphere at an affordable price. We’re even proud of the matte black Not Neutral mugs that we serve our drinks in. But anyone could build something nice, serve something delicious, or buy some neat drinkware. We’re proud of a lot of things, but we’re most proud of the community that we get to experience each and every day in and around our shop. And we certainly didn’t build this community – it was here in the surrounding neighborhoods and schools long before we broke ground. Our Food Is Fresh… Nothing Has Been Frozen Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go. The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good. [read more]
