Our Food Is Fresh… Nothing Has Been Frozen Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go. The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good. [read more]

With over 10 years’ experience running a craft beer shop in downtown Phoenix, Arizona, opening a brewery was the obvious next step and also a lifelong goal. Pepe’s Restaurants have continuously served the Southland with fine quality Mexican food. Pepe’s was founded in 1962 by three brothers, Joe, Tony and Fred. Unable to find steady business at first, the location was changed several times before finally settling in Alhambra in 1962, where the name was changed permanently to “Pepe’s.” During these early years, the brothers often relied on the help of family members to keep the business growing. In 1962, their nephew “Pepe” was sent to fight in Vietnam. This is when Tony, out of love for his nephew, renamed the restaurant after him, Pepe's. In the following years, the restaurant had become a great success. However, in 1973 Tony passed away leaving Joe and Fred to run the business solely. In 1976, the youngest of the three brothers, Fred, joined in helping to expand Pepe’s Restaurants with the opening of the Downey location.
