Our Food Is Fresh… Nothing Has Been Frozen Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go. The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good. [read more]

This Mountainview Diner, built in Singac, New Jersey, Model No. 330, was slated to be “the most modern kitchen in all of upstate”. The residents of Herkimer watched in amazement as the diner was delivered on a flatbed truck and installed right along Main Street. For 65 years the Empire Diner has been the hub of the community and has held a special place in the hearts of many. We strive for excellence in everything we do in life. Our crafted drinks are a way we show respect for our customers and ourselves. They are the beginning of a relationship built on trust and care that through time grows to see our stories unfold in our city. As part of local communities, each Black Rock Coffee Bar team finds ways to serve their neighborhoods. And by doing so we help raise the bar for relationship and compassion. As relationship grows, so does accountability. We hold each other to higher standards for the good of all. Whether it be care for nature, care for those in need, or just a sincere desire to see others do well, we learn to expect a lot from each other and a lot for our customers.
