Our Food Is Fresh… Nothing Has Been Frozen Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go. The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good. [read more]

To find the perfect recipe, you first need the perfect ingredients. And that's what our founders Dena Tripp and Debbie Shwetz were for each other. In 1997, they joined forces, or better yet kitchens, to help make cakes to entertain their friends. The cakes they made were delicious, unlike anything anyone had tasted. As a result, their friends and family asked them to entertain more and more. They quickly realized this side project of theirs could be something more. There was a gap in the world for delicious cakes, readily available, that didn't compromise on their ingredients. Fresh eggs, real butter, and real cream cheese; nothing was too good to achieve perfection. And perfection are those decadent, slowly melting bites, we all know and love. Flash forward and the Nothing Bundt Cakes brand has grown nationwide. Nick DiLello - Owner Nick started his career in the bridal industry opening retail stores across the Southwest. In 2001 he worked at a wedding venue as a General Manager in Las Vegas. He specialized in planning corporate events and designing wedding receptions. An entrepreneur at heart he then purchased a franchise for a national wedding publication in the Arizona market in 2002. For the past 18 years he has produced the second largest and ONLY locally owned and operated bridal planning event in Arizona. Customer service is his number one focus. While his career path has been varied the pride he shows in everything he does shines through. Opening Bottega Pizzeria Ristorante in 2017 combined his love for food and hospitality. Being born in Milano, Italy his Mom was the inspiration behind the stove and the secret to his passion for everything Italian.
