Bánh Mì Bistro is an independent Vietnamese eatery, conceived by husband-and-wife team John Le and Ha Nguyen. After helping run the family business (Little Saigon Restaurant in Old Town Glendale) for several years, they decided to open up their very own fast-casual food venture in late 2014. Since then, they’ve been serving the Phoenix area their classic and modern takes on the iconic bánh mì sandwich (awarded Best Banh Mi by Phoenix Magazine), as well as other staple Vietnamese dishes and specialty drinks.
In keeping with tradition, all meats — including our homemade liver pâté and BBQ pork — are cured and marinated in-house. Everything is prepared fresh with natural ingredients & vegetables, and our bread is locally-baked and delivered daily! Pepe's Lounge
Pepe’s Restaurants have continuously served the Southland with fine quality Mexican food. Pepe’s was founded in 1962 by three brothers, Joe, Tony and Fred. Unable to find steady business at first, the location was changed several times before finally settling in Alhambra in 1962, where the name was changed permanently to “Pepe’s.” During these early years, the brothers often relied on the help of family members to keep the business growing. In 1962, their nephew “Pepe” was sent to fight in Vietnam. This is when Tony, out of love for his nephew, renamed the restaurant after him, Pepe's.
In the following years, the restaurant had become a great success. However, in 1973 Tony passed away leaving Joe and Fred to run the business solely. In 1976, the youngest of the three brothers, Fred, joined in helping to expand Pepe’s Restaurants with the opening of the Downey location. Since then, Pepe’s has continued to grow, opening locations in both Los Angeles, San Gabriel Valley and Orange Counties.
The restaurants have continuously served authentic, high quality Mexican food, keeping their secret recipes inside the family. This has made Pepe’s the well-known establishment it is today

Our Food Is Fresh… Nothing Has Been Frozen
Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go.
The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good.

In 1958 the first Village Inn Pancake House opened its doors in Denver, Colorado and began offering what has since made us famous— made-from-scratch buttermilk pancakes, fresh eggs cooked any style, sizzling bacon and a pot of steaming hot coffee.
