Rito's Mexican Food is celebrating 45 years of business this year and we could not be more excited about the future as a company. What began as a neighborhood convenience store within the Garfield Historic Neighborhood quickly found itself selling more burritos and tacos from its limited "to go" only kitchen, than grocery goods. To that end, Rito and Rosemary Salinas decided to pivot Rito's concept into a take-out-only Mexican Food establishment that has served the "Valley Of The Sun" time-honored family recipes spanning generations. Rosemary and Rito have since passed the company on to their daughter Charlotte who embodies the same work ethic her parents instilled within her over the course of their careers. Like a true family-owned business Charlotte works alongside her sister, nieces, nephews, sons, and long-time staff some of whom have been with the company for over 30 years. How did we get started? The Pandemic caused a lot of people to change how they live, and we were no different. Not being able to go to our favorite restaurants had a major impact on our lifestyle. Due to the time it takes to make Pho the right way, one of our favorite places to eat was our local Pho restaurant. However, once the pandemic was in full effect, this was no longer an option.
So what did we do then? The entire family got involved in brainstorming on how we can make AUTHENTIC Pho in a short amount of time to make it convenient for our busy lifestyle.
First, we took our family recipe that has been passed down several generations, and started to experiment on ways to make it faster, and not sacrifice flavor, taste or authenticity.
Second, we spent time and time again perfecting our process until finally, we hit perfection!
What did we do next? We made kits for ourselves, family members, coworkers and friends to enjoy at home.
What happened next? Friends would tell other friends, family would tell their friends, and before you knew it, there was a circle of demand for our new Pho Kit.
Finally, The PhoLicious LLC kit was born!

Now almost a year and a half later we have gained many faithful customers and continue to see new faces on a weekly basis. It has been my father's dream to run his own business and he made it happen by entering the food truck business. We strive to make quality food at affordable prices. We have also been catering for small graduation parties, weddings, and churches. We hope this year we will be ready to participate in a food truck festival in the near future.
