Our family owned and operated Caramba Mexican Food restaurants cook daily from scratch. No lard, no MSG. We use cholesterol free no trans fat canola oil. Our chicken is 100% fresh, never frozen. Only the leanest cuts of beef are used. We prepare all authentic Mexican dishes and salsas fresh daily. Low carb, low fat, vegetarian items are also available. Breakfast Burritos served all day as well as menudo. Mexican and domestic beers are served ice cold and our award winning " Best in Phoenix" margaritas are made with gold premium tequilas. We opened our first location in downtown Glendale in 1990. Since then we have opened 4 more locations in Phoenix, Glendale, and Surprise. All locations are family owned and operated. Our Food Is Fresh… Nothing Has Been Frozen
Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go.
The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good.

Lou Malnati got his start in the 1940's working in Chicago's first deep dish pizzeria. He took his pizza expertise to Lincolnwood, a northern suburb of Chicago, where he and his wife Jean opened the first Lou Malnati's Pizzeria on March 17, 1971. Lou was known for his fun-loving character as well as making Chicago's best pizza. Loyal patrons lined the streets on opening day for a taste of his delicious deep dish creations. Lou always thought it was funny that an Italian should open a pizzeria in a Jewish neighborhood on an Irish holiday. But that was Lou's style; he loved all types of people and didn't care much about what people thought.
