Due to the time it takes to make Pho the right way, one of our favorite places to eat was our local Pho restaurant. However, once the pandemic was in full effect, this was no longer an option. So what did we do then? The entire family got involved in brainstorming on how we can make AUTHENTIC Pho in a short amount of time to make it convenient for our busy lifestyle. First, we took our family recipe that has been passed down several generations, and started to experiment on ways to make it faster, and not sacrifice flavor, taste or authenticity. In 1958 the first Village Inn Pancake House opened its doors in Denver, Colorado and began offering what has since made us famous— made-from-scratch buttermilk pancakes, fresh eggs cooked any style, sizzling bacon and a pot of steaming hot coffee. To find the perfect recipe, you first need the perfect ingredients. And that's what our founders Dena Tripp and Debbie Shwetz were for each other. In 1997, they joined forces, or better yet kitchens, to help make cakes to entertain their friends. The cakes they made were delicious, unlike anything anyone had tasted. As a result, their friends and family asked them to entertain more and more. They quickly realized this side project of theirs could be something more. There was a gap in the world for delicious cakes, readily available, that didn't compromise on their ingredients. Fresh eggs, real butter, and real cream cheese; nothing was too good to achieve perfection. And perfection are those decadent, slowly melting bites, we all know and love.
