Unable to find steady business at first, the location was changed several times before finally settling in Alhambra in 1962, where the name was changed permanently to “Pepe’s.” During these early years, the brothers often relied on the help of family members to keep the business growing. How did we get started? The Pandemic caused a lot of people to change how they live, and we were no different. Not being able to go to our favorite restaurants had a major impact on our lifestyle. Due to the time it takes to make Pho the right way, one of our favorite places to eat was our local Pho restaurant. However, once the pandemic was in full effect, this was no longer an option. The cake pop craze was becoming mainstream and as orders accumulated; I reached my productivity capacity and was feeling the rolling pain in my hands. As I searched for a machine that would relieve my pain I couldn’t find one that did the job. My search continually came up empty, desperate to find an “easier way”, I decided to build one myself. Over several months and through trial and error with different materials and processes, the Easy Roller was born. Our Food Is Fresh… Nothing Has Been Frozen Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go. The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good. [read more]

In 1952, a brand spanking new silver bullet diner was delivered to a small community in Upstate New York. This Mountainview Diner, built in Singac, New Jersey, Model No. 330, was slated to be “the most modern kitchen in all of upstate”. The residents of Herkimer watched in amazement as the diner was delivered on a flatbed truck and installed right along Main Street. For 65 years the Empire Diner has been the hub of the community and has held a special place in the hearts of many. It tells a story of a gathering of family and friends enjoying great food and lots of laughs. Otto’s Empire Diner has kept the tradition alive and well, winning numerous awards with their food. Among the most notable are the Best Cheeseburger and Best Bacon Cheeseburger awarded by the New York Beef Council and the most recent acclaim of Best Diner in Upstate New York as voted by hundreds of thousands of New York residents. Otto’s Empire Diner is home to the work’s largest Omelet as recognized by Ripley’s! Believe it or Not. This amazing omelet consisted of 41,040 eggs and an unbelievable 2,128.75 square feet.
