Pepe’s Restaurants have continuously served the Southland with fine quality Mexican food. Pepe’s was founded in 1962 by three brothers, Joe, Tony and Fred. Unable to find steady business at first, the location was changed several times before finally settling in Alhambra in 1962, where the name was changed permanently to “Pepe’s.” During these early years, the brothers often relied on the help of family members to keep the business growing. In 1962, their nephew “Pepe” was sent to fight in Vietnam. This is when Tony, out of love for his nephew, renamed the restaurant after him, Pepe's. In the following years, the restaurant had become a great success. However, in 1973 Tony passed away leaving Joe and Fred to run the business solely. In 1976, the youngest of the three brothers, Fred, joined in helping to expand Pepe’s Restaurants with the opening of the Downey location. Since then, Pepe’s has continued to grow, opening locations in both Los Angeles, San Gabriel Valley and Orange Counties. We’re even proud of the matte black Not Neutral mugs that we serve our drinks in. But anyone could build something nice, serve something delicious, or buy some neat drinkware. We’re proud of a lot of things, but we’re most proud of the community that we get to experience each and every day in and around our shop. And we certainly didn’t build this community – it was here in the surrounding neighborhoods and schools long before we broke ground. Rather, we saw an opportunity to serve and host this thriving community and concluded that a great coffee shop would be a great way to do this. Our Food Is Fresh… Nothing Has Been Frozen Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go. The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good. [read more]
