Our Food Is Fresh… Nothing Has Been Frozen Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go. The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good. [read more]

It's Just Wings
At Brinker International, we’re no strangers to building restaurant brands. We already know how to make magic with burgers, ribs, fajitas, margaritas, pastas and homemade desserts. Our chefs at Chili’s and Maggiano’s work passionately to make the best food for our Guests, and it all starts in one place: the kitchen. So we asked our chefs what they’d make if they had free rein to do anything. The only catch was the food also had to be available through delivery, so it had to taste as good at your door as it tasted coming out of the kitchen. Our chefs’ answer? Use time-tested traditional methods of making chicken wings and combine them with some of the most out-of-this-world sauces. Throw the curly fries in for free and leverage existing Chili’s and Maggiano’s kitchens and cooks to sell these killer wings as a pickup or delivery experience at truly stupid prices. [read more]
