Otto's Empire Diner
In 1952, a brand spanking new silver bullet diner was delivered to a small community in Upstate New York. This Mountainview Diner, built in Singac, New Jersey, Model No. 330, was slated to be “the most modern kitchen in all of upstate”. The residents of Herkimer watched in amazement as the diner was delivered on a flatbed truck and installed right along Main Street. For 65 years the Empire Diner has been the hub of the community and has held a special place in the hearts of many. It tells a story of a gathering of family and friends enjoying great food and lots of laughs.
Otto’s Empire Diner has kept the tradition alive and well, winning numerous awards with their food. Among the most notable are the Best Cheeseburger and Best Bacon Cheeseburger awarded by the New York Beef Council and the most recent acclaim of Best Diner in Upstate New York as voted by hundreds of thousands of New York residents.
Otto’s Empire Diner is home to the work’s largest Omelet as recognized by Ripley’s! Believe it or Not. This amazing omelet consisted of 41,040 eggs and an unbelievable 2,128.75 square feet.
We are proud to be affiliated with such a wonderful establishment. It is our goal to offer outstanding meals and service with the same distinction as the original New York diner. We pass on excellence and quality without compromise.
On July 29, 2005, The now Otto’s Empire Diner opened their first location in Phoenix Arizona at 3502 W. Greenway Road Ste. # 20. The response from the community has been great and not only are the people of the community our customers some have become our friends. Our pizzas are made with '00' flour and San Marzano tomatoes, both imported from Italy. We use several different Italian cheeses but the main cheese is a fresh fior di latte mozzarella. We have a myriad of Italian meats to choose from like Prosciutto di Parma, which is a cured pork shoulder, imported from the Parma region of Italy. Our Food Is Fresh… Nothing Has Been Frozen
Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go.
The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good.
