He achieved his dream 16 years later with the help of his brother David Ruiz by opening “Cotijas Taco Shop” in El Cajon, California. Our Food Is Fresh… Nothing Has Been Frozen
Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go.
The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good.

In 1958 the first Village Inn Pancake House opened its doors in Denver, Colorado and began offering what has since made us famous— made-from-scratch buttermilk pancakes, fresh eggs cooked any style, sizzling bacon and a pot of steaming hot coffee.
More than once, vacationers in Denver stopped at Village Inn for a bite to eat and enjoyed it so much that they inquired about franchise opportunities before leaving. Such requests inspired co-founders Merton “Andy” Anderson and Jim Mola to place an ad in The Wall Street Journal for prospective franchisees. Soon after, the first Village Inn franchise started operating in 1961, leading the way for successful franchise development.

Nothing Bundt Cakes
To find the perfect recipe, you first need the perfect ingredients. And that's what our founders Dena Tripp and Debbie Shwetz were for each other. In 1997, they joined forces, or better yet kitchens, to help make cakes to entertain their friends. The cakes they made were delicious, unlike anything anyone had tasted. As a result, their friends and family asked them to entertain more and more. They quickly realized this side project of theirs could be something more. There was a gap in the world for delicious cakes, readily available, that didn't compromise on their ingredients. Fresh eggs, real butter, and real cream cheese; nothing was too good to achieve perfection. And perfection are those decadent, slowly melting bites, we all know and love. Flash forward and the Nothing Bundt Cakes brand has grown nationwide. Throne Brewing was established in March of 2018, when owner-operator Carlos Toma purchased already existing Dubina Brewing in Glendale, Arizona. Revolu, is a modern-day taqueria and bar. The name Revolu is an abbreviated name for a popular street in Tijuana Mexico, Av. Revolucion. Growing up in San Diego and being raised by Jeremiah's maternal grandparents, a lot of time was spent eating "street" food along the colorful street of Revolucion. The sights, sounds, smells and all of the delicious flavors are the inspiration for Revolu.
