Our Food Is Fresh… Nothing Has Been Frozen
Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go.
The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good.

Javier Ruiz immigrated to the United States in 1967 with the dream of opening a taco shop. He achieved his dream 16 years later with the help of his brother David Ruiz by opening “Cotijas Taco Shop” in El Cajon, California. Thanks to the success of this restaurant, more of the Ruiz family members were able to become more involved in the company. In 2003, the Ruiz brothers decided it’s time to expand the family business to Tennessee under the name “Oscar’s Taco Shop®.“ Today, Javier Ruiz has handed the keys to his kids and even though he is retired, he reminds them to always look forward and never look back. To find the perfect recipe, you first need the perfect ingredients. And that's what our founders Dena Tripp and Debbie Shwetz were for each other. In 1997, they joined forces, or better yet kitchens, to help make cakes to entertain their friends. The cakes they made were delicious, unlike anything anyone had tasted. As a result, their friends and family asked them to entertain more and more. They quickly realized this side project of theirs could be something more. There was a gap in the world for delicious cakes, readily available, that didn't compromise on their ingredients. Fresh eggs, real butter, and real cream cheese; nothing was too good to achieve perfection. And perfection are those decadent, slowly melting bites, we all know and love. Flash forward and the Nothing Bundt Cakes brand has grown nationwide. Built on Dena and Debbie's vision, each bakery still has the warmth and nostalgia of its home-kitchen roots, but they also take a modern approach for the world today.

Pepe's Lounge
Pepe’s Restaurants have continuously served the Southland with fine quality Mexican food. Pepe’s was founded in 1962 by three brothers, Joe, Tony and Fred. Unable to find steady business at first, the location was changed several times before finally settling in Alhambra in 1962, where the name was changed permanently to “Pepe’s.” During these early years, the brothers often relied on the help of family members to keep the business growing. In 1962, their nephew “Pepe” was sent to fight in Vietnam. This is when Tony, out of love for his nephew, renamed the restaurant after him, Pepe's.
In the following years, the restaurant had become a great success. However, in 1973 Tony passed away leaving Joe and Fred to run the business solely. In 1976, the youngest of the three brothers, Fred, joined in helping to expand Pepe’s Restaurants with the opening of the Downey location. Since then, Pepe’s has continued to grow, opening locations in both Los Angeles, San Gabriel Valley and Orange Counties.
The restaurants have continuously served authentic, high quality Mexican food, keeping their secret recipes inside the family. This has made Pepe’s the well-known establishment it is today

El Caprichoso Hot Dogs
El Caprichoso, the popular Phoenix hot dog stand where service is fast and courteous, and the Sonoran dogs are perfection. The split-top bun is always fluffy, the hot dog nicely charred and juicy, the beans nicely seasoned, and the various toppings — pico, a dusting of salty cheese, and a squiggle of mayonnaise — are carefully composed and balanced.
