We’re very proud of the beautiful shop that we’ve built in Peoria, Arizona. We’re very proud of the great specialty coffee that we serve from Peixoto. We’re even proud of the matte black Not Neutral mugs that we serve our drinks in. But anyone could build something nice, serve something delicious, or buy some neat drinkware. We’re proud of a lot of things, but we’re most proud of the community that we get to experience each and every day in and around our shop. And we certainly didn’t build this community – it was here in the surrounding neighborhoods and schools long before we broke ground. Rather, we saw an opportunity to serve and host this thriving community and concluded that a great coffee shop would be a great way to do this. The taco was always meant for the worker on the run; an individual that needed to eat quickly but also needed it to be affordable. That is who we are. We pride ourselves in keeping our menu simple with only two meats and now a veggie option. Nothing is ever frozen. Our salsas, guacamole, and marinades are made daily. We never use concentrate for our horchata or Jamaica. Instead we soak our rice with whole cinnamon sticks overnight and blend the next day and we steep our hibiscus flowers to make our Jamaica- it’s a very labor intensive process but we do it because we want to give you an authentic experience when you eat with us. Just months ago you were hard-pressed to find someone who knew what cake pops were, let alone companies making them. Now, they are “popping” up in every bakeshop, supermarket, and coffee house. The cake pop craze was becoming mainstream and as orders accumulated; I reached my productivity capacity and was feeling the rolling pain in my hands. As I searched for a machine that would relieve my pain I couldn’t find one that did the job. My search continually came up empty, desperate to find an “easier way”, I decided to build one myself. Over several months and through trial and error with different materials and processes, the Easy Roller was born.
