Our recipes trace back to our homeland of El Salvador where “Niña Martha” became known by her community for her delicious chicken tamales, fresh green corn tamales and various other homemade meals that she would send her daughter Miriam to deliver to the workers at the “fincas”, the fields of coffee beans and corn. This Mountainview Diner, built in Singac, New Jersey, Model No. 330, was slated to be “the most modern kitchen in all of upstate”. For 65 years the Empire Diner has been the hub of the community and has held a special place in the hearts of many.
