With a baby in tow, who is now managing the restaurant, we were excited to make home-cooked meals for our neighboring friends. He achieved his dream 16 years later with the help of his brother David Ruiz by opening “Cotijas Taco Shop” in El Cajon, California. We’re proud of a lot of things, but we’re most proud of the community that we get to experience each and every day in and around our shop.
