How did we get started? The Pandemic caused a lot of people to change how they live, and we were no different. Not being able to go to our favorite restaurants had a major impact on our lifestyle. Due to the time it takes to make Pho the right way, one of our favorite places to eat was our local Pho restaurant. However, once the pandemic was in full effect, this was no longer an option. So what did we do then? The entire family got involved in brainstorming on how we can make AUTHENTIC Pho in a short amount of time to make it convenient for our busy lifestyle. First, we took our family recipe that has been passed down several generations, and started to experiment on ways to make it faster, and not sacrifice flavor, taste or authenticity. This Mountainview Diner, built in Singac, New Jersey, Model No. 330, was slated to be “the most modern kitchen in all of upstate”. The residents of Herkimer watched in amazement as the diner was delivered on a flatbed truck and installed right along Main Street. For 65 years the Empire Diner has been the hub of the community and has held a special place in the hearts of many. It tells a story of a gathering of family and friends enjoying great food and lots of laughs. Otto’s Empire Diner has kept the tradition alive and well, winning numerous awards with their food. Among the most notable are the Best Cheeseburger and Best Bacon Cheeseburger awarded by the New York Beef Council and the most recent acclaim of Best Diner in Upstate New York as voted by hundreds of thousands of New York residents.
