In 1958 the first Village Inn Pancake House opened its doors in Denver, Colorado and began offering what has since made us famous— made-from-scratch buttermilk pancakes, fresh eggs cooked any style, sizzling bacon and a pot of steaming hot coffee. More than once, vacationers in Denver stopped at Village Inn for a bite to eat and enjoyed it so much that they inquired about franchise opportunities before leaving. Such requests inspired co-founders Merton “Andy” Anderson and Jim Mola to place an ad in The Wall Street Journal for prospective franchisees. Soon after, the first Village Inn franchise started operating in 1961, leading the way for successful franchise development. Our Food Is Fresh… Nothing Has Been Frozen Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go. The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good. [read more]

Due to the time it takes to make Pho the right way, one of our favorite places to eat was our local Pho restaurant. However, once the pandemic was in full effect, this was no longer an option. So what did we do then? The entire family got involved in brainstorming on how we can make AUTHENTIC Pho in a short amount of time to make it convenient for our busy lifestyle. First, we took our family recipe that has been passed down several generations, and started to experiment on ways to make it faster, and not sacrifice flavor, taste or authenticity. Second, we spent time and time again perfecting our process until finally, we hit perfection! What did we do next? We made kits for ourselves, family members, coworkers and friends to enjoy at home. What happened next? Friends would tell other friends, family would tell their friends, and before you knew it, there was a circle of demand for our new Pho Kit.
