CHAR Pizzeria Napoletana was started with a passion for traditional, Napoletana-style pizzas. The owners are from Naples, Italy and wanted to bring that authenticity to everyone. Our pizzas are made with '00' flour and San Marzano tomatoes, both imported from Italy. We use several different Italian cheeses but the main cheese is a fresh fior di latte mozzarella. We have a myriad of Italian meats to choose from like Prosciutto di Parma, which is a cured pork shoulder, imported from the Parma region of Italy. Not everyone can make it to Italy, so we will bring Italy to YOU!

He achieved his dream 16 years later with the help of his brother David Ruiz by opening “Cotijas Taco Shop” in El Cajon, California. Thanks to the success of this restaurant, more of the Ruiz family members were able to become more involved in the company.
