Oscar's Taco Shop
Javier Ruiz immigrated to the United States in 1967 with the dream of opening a taco shop. He achieved his dream 16 years later with the help of his brother David Ruiz by opening “Cotijas Taco Shop” in El Cajon, California. To that end, Rito and Rosemary Salinas decided to pivot Rito's concept into a take-out-only Mexican Food establishment that has served the "Valley Of The Sun" time-honored family recipes spanning generations.
