At Soup&Sausage Bistro, we’re proud to say we accomplished our goal after opening our doors at 04.28.2017. We started by taking ideas from Ukraine, Poland, Russia, and other countries to create our menu. What comes out of that combination is a collection of hearty meat and vegetables dishes new to the typical American palate. Lou Malnati got his start in the 1940's working in Chicago's first deep dish pizzeria. He took his pizza expertise to Lincolnwood, a northern suburb of Chicago, where he and his wife Jean opened the first Lou Malnati's Pizzeria on March 17, 1971. Lou was known for his fun-loving character as well as making Chicago's best pizza. Loyal patrons lined the streets on opening day for a taste of his delicious deep dish creations. Lou always thought it was funny that an Italian should open a pizzeria in a Jewish neighborhood on an Irish holiday. But that was Lou's style; he loved all types of people and didn't care much about what people thought.

We’re very proud of the beautiful shop that we’ve built in Peoria, Arizona. We’re very proud of the great specialty coffee that we serve from Peixoto. We’re even proud of the matte black Not Neutral mugs that we serve our drinks in. But anyone could build something nice, serve something delicious, or buy some neat drinkware.
We’re proud of a lot of things, but we’re most proud of the community that we get to experience each and every day in and around our shop. And we certainly didn’t build this community – it was here in the surrounding neighborhoods and schools long before we broke ground. Rather, we saw an opportunity to serve and host this thriving community and concluded that a great coffee shop would be a great way to do this. Our doors opened in August 2019, and we haven’t looked back since.
Community matters to us, and that’s exactly what pushes us to serve the best coffee with the best service. We aim to make the world of coffee simple, welcoming, and approachable for anyone who walks in through our doors (or through our wall – you’ll have to come to check it out!).
