Chino Bandido Takee-Outee has become a cult favorite among foodies in the valley (and around the country!) since its inception in November 1990. Founded by Frank and Eve Collins, who still own and operate the company today, Chino Bandido blends traditional flavors from Mexican and Asian cuisines — based on Eve’s Chinese heritage as well as their local roots as both Frank and Eve are native Arizonans — and some Jamaican flair added in for good measure! When the husband-and-wife team originally opened their doors, Chino Bandido was just a humble 1,000- square-foot restaurant with seating for just 16 guests modeled after the “hole in the wall” establishments that Frank and Eve love. And the love for Chino Bandido rapidly grew among local diners, which quickly necessitated the restaurant’s growth. As the couple realized most diners wanted to come in and enjoy a sit-down dining experience versus taking out, they expanded year by year until the restaurant encompassed more than 6,000 square feet and provided seating for 150 guests. In early 2021, Chino Bandido announced the closure of its original location after more than 30 years in favor of a new location at 310 West Bell Road, which is underway. Eve, who carries on the restaurant’s legacy solo since Frank passed in 2013, decided it was time for a change. The new location provides 6,000 square feet, much of which is dedicated to an expansive kitchen where the brand’s favorite dishes will continue to be handmade from scratch using the time-honored recipes and lots of love. Just months ago you were hard-pressed to find someone who knew what cake pops were, let alone companies making them. Now, they are “popping” up in every bakeshop, supermarket, and coffee house. The cake pop craze was becoming mainstream and as orders accumulated; I reached my productivity capacity and was feeling the rolling pain in my hands. As I searched for a machine that would relieve my pain I couldn’t find one that did the job. My search continually came up empty, desperate to find an “easier way”, I decided to build one myself. We’re very proud of the beautiful shop that we’ve built in Peoria, Arizona. We’re very proud of the great specialty coffee that we serve from Peixoto. We’re even proud of the matte black Not Neutral mugs that we serve our drinks in. But anyone could build something nice, serve something delicious, or buy some neat drinkware. We’re proud of a lot of things, but we’re most proud of the community that we get to experience each and every day in and around our shop. And we certainly didn’t build this community – it was here in the surrounding neighborhoods and schools long before we broke ground. Rather, we saw an opportunity to serve and host this thriving community and concluded that a great coffee shop would be a great way to do this. Our doors opened in August 2019, and we haven’t looked back since. Community matters to us, and that’s exactly what pushes us to serve the best coffee with the best service. We aim to make the world of coffee simple, welcoming, and approachable for anyone who walks in through our doors (or through our wall – you’ll have to come to check it out!).
