We’re very proud of the beautiful shop that we’ve built in Peoria, Arizona. We’re very proud of the great specialty coffee that we serve from Peixoto. We’re even proud of the matte black Not Neutral mugs that we serve our drinks in. But anyone could build something nice, serve something delicious, or buy some neat drinkware. We’re proud of a lot of things, but we’re most proud of the community that we get to experience each and every day in and around our shop. And we certainly didn’t build this community – it was here in the surrounding neighborhoods and schools long before we broke ground. Rather, we saw an opportunity to serve and host this thriving community and concluded that a great coffee shop would be a great way to do this. Our Food Is Fresh… Nothing Has Been Frozen Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go. The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good. [read more]

The taco was always meant for the worker on the run; an individual that needed to eat quickly but also needed it to be affordable. That is who we are. We pride ourselves in keeping our menu simple with only two meats and now a veggie option. Nothing is ever frozen. Our salsas, guacamole, and marinades are made daily. We never use concentrate for our horchata or Jamaica. Instead we soak our rice with whole cinnamon sticks overnight and blend the next day and we steep our hibiscus flowers to make our Jamaica- it’s a very labor intensive process but we do it because we want to give you an authentic experience when you eat with us. While he enjoyed every bite, he also learned that it means something different depending on where you’re from: In the Carolinas, it’s not BBQ unless there’s pork and a vinegary sauce. In Memphis, you better be craving ribs. If you’re from St. Louis or Kansas City, you’re going to be expecting a tomatoey sauce. Texas BBQ is all about the beef brisket. Oren took all of these BBQ experiences from across the country and created NakedQ, where we rub, smoke and serve our meats naked (without sauce) like pork, ribs, brisket, links, turkey, and chicken with our tried and true recipes.
